February 5. After practicing for Saturday's FLOW launch, I continued an evening of productivity by starting to set up my new pantry. Part of my healthy-eating efforts include eating more whole grains...and part of actually eating whole grains is knowing what I've got on hand and keeping them fresh.
So I found these airtight square canisters at Target (also available at Bed, Bath and Beyond). I searched around to find glass because I already have enough exposure to plastic chemicals. Plus, the squares make it easy to know what's inside, and they stack well.
Better yet, I've already started using the contents, beginning with lentil and rice tacos on Friday night.
4 c chicken stock, 3/4 c lentils (rinsed), 3/4 c brown rice, chili powder, cumin, onion powder, and garlic powder. Bring to boil, then reduce heat and simmer (covered) for 30-40 minutes or until most of the water has been absorbed. Salt to taste, and use as a taco filling in place of meat.
